March 4th Cooking with Capomo Workshop
This one-day workshop demonstrates the many ways capomo can be used in new and traditional recipes; such as roasting and grinding into a rich flour as a substitute for maize in tortillas.
Capomo, AKA Maya nut, Breadnut or Ramon nut is a relative of the fig family, it is nutritionally comparable to amaranth, quinoa and soybean. It is rich in fiber, protein, vitamins A, E, C and B, and minerals, including calcium, potassium, folate, iron and zinc. Capomo was a favored food amongst indigenous groups of Mesoamerica and is found throughout Central America and Mexico
